Lemon Frosting
Lemon is probably one of my favorite flavors! It's lightweight, refreshing, and tastes great in and with just about anything. Yummy! Use this frosting on Low Sugar Lemon Cupcakes for a delicious and tangy combination.

Makes: Enough for 24 mini cupcakes (Probably enough for 12 regular cupcakes)

Ingredients
- 1/2 cup all vegetable shortening
- 1/2 cup margarine (I use Earth Balance)
- 1/4 tsp lemon oil (this is different than lemon juice)
- 3 cups organic powdered sugar
- 2 1/2 tsp soymilk or almond milk
Directions
- Begin by softening the margarine and combining it with the shortening. Blend in the lemon oil (this is very powerful stuff so don't use more than 1/4 tsp). Add in the powdered sugar cup by cup. Blend in your soymilk as needed. Do a taste test (or a few!) and you're ready to go.
