Lovely Lavender Frosting

- 1/2 cup margarine
- 1/2 cup all vegetable shortening
- 1/4 tsp lavender extract
- 2 heaping tbsp blackberry jelly/jam/preserves (as long as it is smooth and no fruit chunks)
- 2 cups of powdered sugar
- Soften the margarine (don't melt) and, using a hand mixer, blend together with the shortening. Add in just 1/4 a tsp of lavender extract (no more or it will taste soapy) and blend. To make a natural purple color use blackberry jam and blend well. I was running low or else I would have put more in to make it a deeper purple. Don't worry about the blackberry overpowering the lavender. After piping the frosting onto the Chocolate Lavender Cupcakes the flavor intensifies. Using a 2D tip (to make the rose - just pipe in a circle from the inside out)
