Num Num Brownies
How can anyone not love the classic chocolate brownie? I myself am a huge fan of the quick and easy mug brownie. As all chocolate lovers know, brownies are great. They have the yummy texture of a cake but can still be gooey like a cookie freshly out of the oven. Mmm. Can you tell I'm writing this while my brownies are baking?
These brownies are super quick and easy to make, and require minimal cleanup, always a plus. This was actually an unintentional recipe. I wanted to make some brownies so I looked around for a recipe, only to find that the first few I clicked on had the same ratio of sugar to flour! A little absurd if you ask me. So here is a classic brownie recipe, that I'm sure all of you fabulous chefs could make in a flash.

Ingredients
Directions
- 2 cups of all purpose flour
- 1 cup sugar
- 1 cup Stevia or sugar substitute (you can also just use another cup of sugar)
- 3/4 cup of cocoa powder (or a cup if you're a chocoholic like me)
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup water
- 1/2 cup vegetable oil
- 1/2 cup unsweetened applesauce
- 1/2 cup chocolate chips (optional)
Directions
- Preheat your oven to 350F. Grease a 9x13 inch pan and set aside. I use coconut oil spray to grease my pans. Mix your flour, sugar, sugar substitute, cocoa powder, baking powder, and salt together in a large bowl. Add in your water, vegetable oil, and applesauce. After mixing all of this together add in your chocolate chips. After taste-testing pour your batter into the prepared pan. Bake for 20-30 minutes or until a toothpick inserted in the brownies comes out clean. Let cool for at least 10 minutes before cutting. Serve topped with some vegan ice cream or vegan coconut cool whip and let the compliments flow in!
I know this recipe isn't super healthy, but sometimes you just need that easy, vegan baking without all of the hassle or special ingredients that can only be found at Whole Foods. Bring this to a pitch in and I guarantee no one will be able to tell the difference. But you'l know that you were able to make a delicious treat without harming any animals!
