Maple Pecan Cupcakes

Ingredients
- 1 cup plain Soymilk
- 1 tsp apple cider vinegar
- 1 1/2 cup all purpose flour
- 1 tablespoon cornstarch
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1 pinch of salt
- 3/4 cup brown sugar
- 1/3 cup maple syrup
- 1 tsp vanilla extract
- 1/2 cup crushed pecans

- Begin by preheating your oven to 350 F. Fill cupcake sheet with liners and set aside. Combine your soymilk and apple cider vinegar in a measuring cup and set aside. In a large bowl combine flour, cornstarch, baking powder, baking soda, salt and brown sugar. Mix together then ad in the maple syrup, vanilla, and crushed pecans. Mix together your ingredients then fill your cupcake liners 2/3 of the way full. Bake for about 20 minutes. You can also try touching the tops of the cupcakes. They should feel firm. Because of the maple syrup and brown sugar the toothpicks tend to come out sticky, even if the cupcakes are done. But even if these are underdone it's not a big deal because they're vegan! :)
- Once these have cooled try topping them with Straight from the Tree Maple Creme Frosting
- If you want a lower sugar recipe try replacing the maple syrup with canola oil. I haven't tried this but if you do let me know how it turns out in the comments!
